-1/2 cup uncooked white rice -1/2 small onion, diced -1/4 small green bell pepper, diced

-1 small carrot, peeled and grated -3 tablespoons vegetable oil -2 eggs, beaten

-1/2 teaspoon salt -1/4 teaspoon black pepper -1/2 pound boneless, skinless chicken breasts, cut into bite-sized pieces

-1/4 cup soy sauce -1/4 cup chicken broth -1 tablespoon sugar
