If you want this to be gluten free just make sure your broth is GF as some have wheat flour added as a thickener. Also many bouillon cubes have gluten so check those ingredients too if that is what you plan to use instead of broth or stock! Better Than Bouillon paste is GF and works great in this recipe too just add less water than called for on their package directions since it is concentrated! Use about 2 1/2 cups water for every 3 tablespoons of bouillon paste called for in recipe below if using bouillon paste instead of liquid broth or stock. This can easily be made vegetarian by leaving out the chicken and doubling the amount of vegetables used instead! Just sauté veggies until they are tender then proceed with recipe as written adding an extra tablespoon or two of olive oil if needed when cooking rice since there will be no chicken fat rendered during cooking to help cook rice!) You could also add some chopped cooked bacon to this dish if desired for non vegetarians! It would be delicious!!! 🙂 Feel free to experiment a little and add other chopped veggies you may like such as carrots, zucchini , summer squash , corn etc… Just don’t add too many different kinds or it will get mushy!
